The couple invited guests for cocktails and appetizers on the rooftop of the hotel which houses "Hell's Kitchen" chef Gordon Ramsay's eponymous restaurant.
"Nick and Vanessa greeted guests hand-in-hand," a witness told People magazine. "Vanessa looked gorgeous in a white dress with a black sash. She and Nick both seemed very excited to celebrate with their families and friends."
Though the couple has remained coy about their wedding date and location, Lachey revealed recently that the "countdown's begun." The former 98 Degrees singer also joked that preparations are getting expensive.
"I think the one thing not affected by the recession is the wedding business!! Damn, this is getting expensive. Good thing she's worth it," Lachey wrote on Twitter earlier in the month.
Lachey and Minnillo announced their engagement on November 4, after dating for four years.
This will be the second marriage for Lachey, who divorced Simpson in 2006. Simpson and Lachey starred on the MTV reality show "Newlyweds: Nick and Jessica," which documented their married life together.
Minnillo, who is a former Miss Teen USA and television host of shows like "True Beauty," once starred in a music video for Lachey's song "What's Left of Me," which was about his divorce from Simpson.
Simpson is currently engaged to former NFL player Eric Johnson, the two announced their engagement in November 2010. They have yet to reveal their wedding date but Simpson announced in March that she and Johnson might elope.
